Cranberry Crockpot Chicken

Before I moved to the US five years ago, I had never cooked with a crockpot. I would slow cook and braise meats in the heavy cast iron pan in the oven. Then, one morning visiting my brother and his family in DC I observed my sister-in-law assembling many tasty ingredients in a crockpot – and was astonished about the tasty creation that awaited us when we got home that night.

A couple of months later, a friend who moved handed me down a small crockpot, just the right size for a one person household. It’s a simple machine, no fancy timers or programs, but it does it’s job – from simple dishes to gourmet creations. All is possible with this magic machine.

One of my favorite dishes is this Cranberry Chicken – delish over rice, in a lettuce wrap or use it in this recipe for winter nachos!

Our artisan made Tomato Catsup “Smoky” plays a central role in this recipe. This catsup (original spelling for “ketchup”) is based on old heirloom recipes from the Midwest, using fresh cranberries for additional acidity.


Ingredients for two people

(1) 1 cup Scrumptious Pantry Tomato Catsup Smoky

(2) 1 cup red onions, chopped

(3) 1 cup poblano peppers or spicy banana peppers, chopped

(4) 1 chicken leg

(5) 1/4 cup water or chicken broth


Method: add all ingredients into the crockpot. Cook for about four hours or till the meat falls off the bone.
