Carr Valley Cheese is known for their world-class old-fashioned cheddars and one of a kind American cheeses. For their artisan cheeses, they use sheep’s milk, goat’s milk, cow’s milk and various blends in order to create a unique variety of American flavors created by Carr Valley’s owner and head cheese maker Sid Cook. He is one of the few Master Cheesemakers in the United States, having successfully passed a rigorous advanced training and education program mirrored on traditional European Masters Programs. No wonder Carr Valley makes such wonderful artisan cheese products.

Sid Cook is the fourth generation owner of the Wisconsin based family business, which has been around for over 220 years! That is nearly as old as the entire American cheese industry! If we took a trip back in time we would notice that America was not originally a country that specialized cheese making. It was not until the pilgrims came over on the Mayflower that America had cheese. In the early days cheese was made small-scale in the household and was enjoyed solely by family members. With the exception of a few local markets, cheese was not sold. Over the years Americans began to develop a cheese industry that was all their own. They found that traditional European style cheeses could not endure colonial weather extremes and as a result they began to experiment. Soon they developed the cheese we know today as cheddar which was remarkably sturdy and held up nicely under colonial conditions. Eventually this “American Cheese” became very popular and ended up being sold in Europe. After the revolutionary war many British aristocrats refused to buy this “Yankee Cheese” claiming that it was inferior to European varieties. Despite criticism from high-class British citizens, British commoners quickly fell in love with American cheese.
