Heirloom Pickles Beaver Dam Pepper

Description: The Beaver Dam Pepper is a spicy pepper, named after Beaver Dam, Wis., where it was introduced around 1913 by Hungarian immigrants. To celebrate its heritage, we hand-pack them in a low salt, low vinegar brine with an old world spice profile. Bay leaves, black pepper and coriander accentuate the pepper's unique flavor. The Beaver Dam Pepper is featured on the Slow Food Ark of Taste as a valuable variety on the brink of extinction. We are thankful for John at Stone Circle Farm and Nicole at Good Earth Farm, who cultivate the Beaver Dam Pepper for us and help us to keep it around!

Suggested as an accompaniment to a charcuterie plate, as a side to slow cooked beans and pulled pork or as the secret ingredient in a Bloody Mary.
