
Cosimo has undertaken extensive soil analysis to make sure every olive is handpicked at the perfect moment. Being in northern Tuscany, in a fairly hilly location with close proximity to the sea, the character of the olives can vary distinctively in between one patch of olive trees and the other (there are 1000 trees growing on the estate). The olives are then gently pressed below 70 degrees Fahrenheit to ensure that the properties of the oil are not destroyed. After tasting the different batches and composing the most harmonious blends, this extra virgin olive oil is immediately bottled in dark glass bottles, in order to avoid the decay of its exquisite characteristics and valuable properties.
