Fish on the Grill
June 14th, 2010Fish is such a healthy meal. Unfortunately the percentage of the population living on the water and having their own little fishing boat is fairly small. Often enough, we do not even live close to moving water with happy fish living in it. So much for eating local! Luckily, the amount of stores focusing on sustainably fished seafood is steadily increasing. And that is important, cause we are on the brink of overfishing our oceans, lakes and rivers. So make sure your fish of choice is in season and fished sustainably. If you cannot get your hands on sea bass, no worries, any other white fish with meaty flesh will be just as perfect. Ask your fishmonger for a recommendation.
Ingredients
1 whole sea bass, cleaned & without scales. (ca. 3 lb.)
1 untreated lemon, sliced
Fresh parsley
3 tbsp. of Roberta’s Herbed All-purpose Salt
6 tbsp. of Darro's Organic 100% Mission Extra Virgin Olive Oil
Method: (1) Heat oven to 350°F. (2) Place the whole, cleaned fish on a piece of aluminum foil big enough to completely wrap it. (3) Stuff fish with parsley and slices of lemon. (4) Rub it generously with Roberta's Herbed All-purpose Salt and drizzle Darro's Extra Virgin Olive Oil over the fish. (5) Close aluminum wrap well and grill for ca. 20 minutes at 300°F in the oven. You can also put in on your grill and join the outdoor fun!
